PANEER MASALA

What you will need

1.Paneer                                 250 grams
2.Potato                                 1 medium
3.Tomato                                1big size
4.Ginger                                 1 inch
5.Garlic                                  15-20 cloves
6.Onion                                  1 medium
7.Red chilly  powder                1/2 teaspoon
8.Turmeric                              1/2 teaspoon
9.Oil                                       3 tablespoon
10.Garam masala                     1/2 teaspoon
11.Coriander powder                 1/2 teaspoon
12.Cumin powder                     1/2 teaspoon
13.Coriander leaves                
14.Milk                                    1/2 Liters
15.Salt
You will need some whole spices such as green cardamom (2 nos),bay leaves(1 nos),cinnamon(1 inch long)
                        
Lets cook it all

First make a smooth paste of ginger,garlic.In a heavy bottom pan add 3 tablespoon of oil ,add all whole spices and fine chopped onions.Satue till golden brown then add ginger garlic paste,turmeric,chilly powder,salt to taste,fine chopped tomato and all the powder spices except garam masala .and saute it in medium flame till oil separates from the masala. In the meanwhile dice potato and paneer..After you are done with the masala  potato.Cover and cook for 5 -7 min in medium flame.Now add milk and cook.When potatoes are done add paneer and cook for 5 mins. Garnish with coriander leaves.

Serve hot.

CHINGUDI (PRAWN) TARKARI- Oriya Style


What you will need

1.Prawns                                 750 grams
2.Lemon                                 1 tablespoon
3.Ginger                                 1 inch
4.Potato                                 2 medium
5.Tomato                                1big size
7.Garlic                                  15-20 cloves
8.Onion                                  1 medium
9.Red chilly  powder               1/2 teaspoon
10.Turmeric                            1/2 teaspoon
11.Mustard oil                         3 tablespoon
12.Garam masala                    1/2 teaspoon
13.Coriander powder               1/2 teaspoon
14.Cumin powder                    1/2 teaspoon
15.chicken masala                   1/2 teaspoon
16.salt
                        
Lets cook it all

Clean and marinate prawns with salt, lemon juice,turmeric and shallow fry in a wok till all the water evaporates.By that time make a smooth paste of ginger,garlic,and onion.In a heavy bottom pan add some 2tablespoon of oil.When the oil is hot add ginger garlic and onion paste,turmeric,chilly powder,salt to taste,fine chopped tomato and all the powder spices and saute it in medium flame till oil separates from the masala. In the meanwhile boil potato.Peel,cut and set aside.After you are done with the masala add prawns and potato and 2 cups of water.Cook for 5 -7 min in medium flame.Garnish with coriander leaves.

Serve hot.

KAKERA PITHA
What you will need

1.Rava                                 1/2 kg
2.Sugar                               1/2 cup   
3.Fennel seeds                     2 tea spoon
4.Salt                                   1/4 teaspoon
5.Oil     
                       
                         
Lets cook it all

In a heavy bottom pan add 1.2 lts of water.In it add salt fennel seeds sugar.when water comes to boil lower the flame and slowly add rava to it.stir continuously to avoid lumps.Cook in a slow flame till it get cooked and form a dough.remove from flame and cover it and let it rest for sometime to cool down a little.by that time take another wok take oil for deep frying.Knead the dough well.Roll out small balls and give a flattened shape and deep fry it till golden brown.

Serve.

EGG BHURJI

What you will need

1.Eggs                                    4 nos
2.Green peas                          1/4 cup
3.Ginger                                 1 inch
4.Potato                                 1/4 cup
5.Tomato                                1/4 cup
7.Carrot                                  1/4 cup
8.Cauliflower                           1/4 cup
9.Onion                                  1/4 cup
10.Red chilly  powder               1/2 teaspoon
11.Turmeric                              1/2 teaspoon
12.Mustard oil                         2 tablespoon

13.Cumin seeds                        1/2 teaspoon
14.Salt
15.Oil
                        
Lets cook it all

In a wok take generous amount of oil ,when oil is hot, add cumin seeds ,chopped ginger,onions,potato,carrot,cauliflower,tomato,green peas.Add turmeric,red chilly,and salt to taste. Cook it covered till half done.Now add eggs and cook for 15 min or till done.If you like hot then can add chopped green chillies.

Serve hot.

BREAD DAHI VADA

                                                             


What you will need

1.White bread                              4 nos
2.Rice flour                                 4 tablespoon
3.Yoghurt                                    1/2 liter
4. Baking soda                             1/2 teaspoon
5.Coriander leaves                        2 tablespoon
7.Ginger                                       2 teaspoon
8.Onion                                        1 medium
9.Green chilly                                2 teaspoon
10.Curry leaves                             10-15 leaves
11.Whole spices*                            1/2 teaspoon
12.Red chilli                                   2-3 nos
13.Oil                                         
14.salt

*Whole spices include mustard seeds,cumin,fenugreek,onion seeds,fennel seeds all mixed in equal quantities.
                        
Lets cook it all

Cut the sides of the bread .Take a bowl mix bread,rice flour,2 tablespoon yoghurt,salt,finely chopped ginger,onion,green chillies,coriander leaves baking soda and make a dough.If required add a little water.Heat enough oil in a wok.Now take some oil in palm and make small vada from the dough and deep fry it.
Take enough water in a bowl and add the vada in it for 1 min.In another bowl take the rest yoghurt add 1/2 cup water,salt and mix it well.Heat a wok,add 1 teaspoon of oil.When the oil gets nice and hot add whole spices,broken red chillies,curry leaves and remove from flame and add it to the curd.Mix it well.Finally add the prepared vade to it.Leave for 30 -40 min before serving.

If you wish you can add some roasted cumin and red chilly powder for added flavors.

BREAD VADA

What you will need

Lets cook it all

Cut the sides of the bread .Take a bowl mix bread,rice flour,yoghurt,finely chopped ginger,onion,green chillies,coriander,curry leaves baking soda,salt and make a dough.If required add a little water.Heat enough oil in a wok.Now take some oil in palm and make small vada from the dough and deep fry it.

Serve hot with chutney.

GULAB JAMUN (in sweet potato)


What you will need

1.Sweet potato                        250 grams
2.Amul/Milk powder                150 grams
3.Cardamom powder                2 teaspoon
4.Saffron                                2-3 strands
5.Sugar                                  350 grams
6.Oil
7.Salt
8.Lemon

Lets cook it all

Clean and boil sweet potato with  1/2 teaspoon of salt.Peel and smash add milk powder n cardamom powder and make dough.Make small balls out of it .Heat enough oil in a wok for frying.Deep fry all the balls till brown.Remember to fry in medium flame.
In another pot add sugar and 2 cups of water and boil it till all the sugar dissolve,when it comes to boli lower the flame and simmer it for 2 to 3 min.After removing from flame just add 1 teaspoon of lemon juice to avoid crystallization of sugar.Now add the fried balls and leave for 1-2 hrs.

Serve.

CHINGUDI (PRAWN) PATUA- Oriya Style


What you will need

1.Prawns                                 250 grams
2.Lemon                                 1 tablespoon
3.Ginger                                  1 inch
4.Potato                                  150 grams
5.Tomato                                100 grams
7.Garlic                                   15-20 cloves
8.Onion                                   2 medium
9.Red chilly  powder               1/2 teaspoon
10.Turmeric                             1/2 teaspoon
11.Mustard oil                         2 tablespoon
12.salt
                        
Lets cook it all

Clean and marinate prawns with salt, lemon juice,turmeric and shallow fry in a wok till all the water evaporates.By that time make a smooth paste of ginger,garlic.In a heavy bottom pan put prawns,ginger garlic paste,turmeric,chilly powder, oil,salt to taste,fine chopped tomato and potato.Cover the pan and cook for 15 to 20 min in slow flame.

Serve hot.

CHETTINAD CHICKEN


What you will need

1.Boneless chicken                   250 grams
2.Yoghurt/lemon                      1 tablespoon
3.Ginger                                  1 inch
4.Red chilly                             4-5 nos
5.Rice flour                              2 teaspoon
7.Garlic                                   10-15 cloves
8.Onion                                   1 medium
9.Curry leaves                         10-15 leaves
10.Red chilly  powder               1/2 teaspoon
11.Turmeric                             1/2 teaspoon
12.oil
13.salt
                        
Lets cook it all

Clean and marinate chicken with salt, lemon juice or yoghurt,turmeric and red chilly powder and keep it in refrigerator for 15 min.By that time make a smooth paste of ginger,garlic,curry leaves,onion,chilly.Again marinate the chicken for another 30 min after mixing with the prepared paste and rice flour.Then heat a wok n add some oil then shallow fry the chicken till done.

Serve hot.

DAHI BHINDI

What you will need

1.Yoghurt                                1 cup
2.Bhindi                                 10-15 nos
3.Red chilly                             1-2 nos
4.Besan                                  1 teaspoon
5.Mustard seeds                     1 teaspoon
6.Curry leaves                         5-8 leaves
7.Red chilly                             1/4 teaspoon
8.Turmeric                              1/4 teaspoon
9.oil
10.salt
                        
Lets cook it all

Clean and cut the bhindi (size should be little big lets take 1 inch).Heat 1 teaspoon of oil in a wok and saute bhindi with some salt.we will cover it and cook it till its half cooked.Remove it from fire.Now take the yoghurt and besan and some water ,mix it well removing all the lumps add a pinch of red chilly powder,salt to taste and turmeric powder and set aside.Again add 1 teaspoon of oil again to the wok add red chilli and mustard seeds.once it starts crackling add curry leaves and the yoghurt and simmer it for next 10 min.Now add the half cooked bhindi and cook for another 5 to 8 min till the bhindi get fully cooked.

Serve.

ROSE LASSI

What you will need

1.Yoghurt                                   1/2 liter          
2.Rose syrup                             1/2 cup
3.Milkmaid                                2 tablespoon
4.Vanilla Icecream                      2 tablespoon  
5.Unsweetened mawa                 2 tablespoon
7.Almonds                                 2-3 nos
6.cherry                                    2-3 nos
          

Lets prepare

Put all the ingredients except almonds and cherry and blend it well  with ice cubes.garnish with chopped almonds and cherry.

Serve chilled to beat the heat.

 GARLICKY BABYCORN

What you will need

1.garlic chopped                     2 tablespoons
2.baby corn cut diagonally      15-20 nos
3.cornflour                             1-2 tablespoon
4.black pepper                       1/2 teaspoon
5.spring onions                       1 cup
7.onions                                 1 medium size
6.green chilly                          2-3 nos
8.oil
9.salt
10.soya sauce                         1/2 teaspoon
11.coriander                          

Lets cook it all

Blanch all the cut baby corn  with some salt.Strain the water and add cornflour to it just to coat all the baby corn.Meanwhile heat sufficient oil in a wok and deep fry it for 3 to 4 min or till its crisp.Add 1 teaspoon of oil in another wok ,add chopped garlic saute foe a min add finely chopped onions,finely chopped green chilly and saute for another 1 min.Then add fried babycorn and crushed black pepper.finally add soya sauce and salt to taste following with chopped coriander and spring onions.give it a quick toss on a high flame (remember to saute after adding coriander and spring onions).
