                           APPLE CINNAMON JAM


What you will need

2 apple,peeled and chopped
1/4 cup sugar
1 tbsp lemon juice
1/2 tsp cinnamon powder
pinch of salt

 


Lets cook it all

Put the chopped apples with 1/4th cup of water in midium flamewith salt.cook till softened.mash well.add sugar and lemon juice and cook it till dry in low flame.finally add cinnamon powder and mix well.transfer to a jar after cooling and refrigerate.


Serve with bread or toast.
 .

                                    KEEMA PALAK


What you will need

500 gm chicken mince
2 cups of shredded spinach
2 onions finely chopped
2 tbsp butter
1 tsp refined oil
1/4 tsp haldi
1/2 tsp onion seeds
1/4 tsp fenugreek seeds
1/2 tsp crushed fennel seeds
2 midium sized tomatoes
1 tbsp chopped ginger
1 tbsp choppd garlic
2 dry chilli
salt to taste
 


Lets cook it all

First coarsely grind tomatoes,ginger,garlic,chilli and keep aside.put  a nonstick pan on fire and add the oil and butter.when butter is fully melt add all the seeds.allow to crackel.then add the onions and saute till golden .there goes keema,haldi,and the prepared paste.mix well and then add salt.cover it and cook for 5 min in medium flame.then add the spinach.cook it till it dries. 


Serve hot.

                                                POTATO KHEER
 
What you will need


  1. 2 medium size Potatoes
  2. 1 tbsp. Ghee
  3. 10 Raisins
  4. 6 – 8 Cashews /almonds
  5. 4 cups Milk
  6. ½ cup Sugar
  7. ½ tsp. Cardamom Seeds powdered
  8. condensed milk(optional)
  9. salt ½ tsp.
  10. 4-6 saffron strands 

                         
Lets cook it all


Clean peel the potatoes and grate them directly in a bowl of water as they tend to change color due to starch.Boil the milk.Add sugar,salt,saffron,condensed milk and let the milk to simmer for 15 min in medium flame.Remove water from the potato and wash it.Now squeeze all the excess water from the potatoes and add to the boiling milk.cook in low flame till the potato is done.meanwhile heat another pan add ghee and saute the raisins n cashews/almonds.Set aside.

Let it cool garnish with raisins and cashews.

Serve.

NOTE: please adjust your sugar as per your taste if using condensed milk as it contains sugar.

FISH & DRUMSTICKS CURRY-Oriya Style
What you will need

1.Rohu fish                              4 pieces
2.Drumsticks                           1 no
3.Potato                                  1 medium
4.Tomato                                 1big size
5.Onion                                   1 small
6.Mustard Paste                      2 tablespoon
7.Red chilly  powder                 1/2 teaspoon
8.Turmeric                               1/2 teaspoon
9.Mustard oil                           3 tablespoon
10.Cumin powder                     1 teaspoon
11.salt
                        
How to make mustard paste?

In a grinder take black mustard seeds ,add a pinch of salt to it and dry grind it to a powder.Now add garlic (1/4 of the mustard seeds) and small amount of water and grind it to make a fine paste.You should prepare this paste before 30 min you want to make the curry.This is the most important part of this curry.It will not taste good if you will make the paste and use it in the curry immediately.

Lets cook it all

Clean and marinate fish with salt,turmeric and shallow fry in a wok till golden brown.By that time fine chopped the onion,cut the drumsticks and potato in long strips.In a heavy bottom pan add some 2tablespoon of oil.When the oil is hot add onion ,turmeric,chilly powder and saute till golden brown,now add salt to taste,fine chopped tomato and cumin powder and saute it in medium flame till oil separates from the masala.After you are done with the masala add par boiled potato ,mix water and mustard paste and add to the masala.When water comes to a boil then only add drumsticks.Now cook for 5 -7 min in medium flame or till potatoes are done.Add fish and let it simmer for another 5 min.

Serve hot.

CHOCO CHIPS OATS COOKIES
What you will need

1.Rolled oats                        1 cup
2.Sugar                              1/2 cup   
3.Choco chips                   
4.All purpose flour               2 tablespoon                                   
5.Butter                              4 tablespoon   
6.Baking soda                      1/4 teaspoon
7.Milk                                 2 tablespoon
8.Coco powder                    1 tablespoon
9.Salt
                       
                         
Lets cook it all

Preheat microwave/oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.In a large bowl,mis the oats the flour you have set aside and all the other ingredients and form a dough.
Add milk to make the dough.if u need you can add some more to make it a soft dough.Now you can rolled the cookies of any shape as you like it and top it with choco chips.Now keep the cookies and bake it for 10 to 12 minutes in the preheated oven/microwave.Now crunchy and tasty cookies are done to melt in your mouth.

PANEER MASALA

What you will need

1.Paneer                                 250 grams
2.Potato                                 1 medium
3.Tomato                                1big size
4.Ginger                                 1 inch
5.Garlic                                  15-20 cloves
6.Onion                                  1 medium
7.Red chilly  powder                1/2 teaspoon
8.Turmeric                              1/2 teaspoon
9.Oil                                       3 tablespoon
10.Garam masala                     1/2 teaspoon
11.Coriander powder                 1/2 teaspoon
12.Cumin powder                     1/2 teaspoon
13.Coriander leaves                
14.Milk                                    1/2 Liters
15.Salt
You will need some whole spices such as green cardamom (2 nos),bay leaves(1 nos),cinnamon(1 inch long)
                        
Lets cook it all

First make a smooth paste of ginger,garlic.In a heavy bottom pan add 3 tablespoon of oil ,add all whole spices and fine chopped onions.Satue till golden brown then add ginger garlic paste,turmeric,chilly powder,salt to taste,fine chopped tomato and all the powder spices except garam masala .and saute it in medium flame till oil separates from the masala. In the meanwhile dice potato and paneer..After you are done with the masala  potato.Cover and cook for 5 -7 min in medium flame.Now add milk and cook.When potatoes are done add paneer and cook for 5 mins. Garnish with coriander leaves.

Serve hot.

CHINGUDI (PRAWN) TARKARI- Oriya Style


What you will need

1.Prawns                                 750 grams
2.Lemon                                 1 tablespoon
3.Ginger                                 1 inch
4.Potato                                 2 medium
5.Tomato                                1big size
7.Garlic                                  15-20 cloves
8.Onion                                  1 medium
9.Red chilly  powder               1/2 teaspoon
10.Turmeric                            1/2 teaspoon
11.Mustard oil                         3 tablespoon
12.Garam masala                    1/2 teaspoon
13.Coriander powder               1/2 teaspoon
14.Cumin powder                    1/2 teaspoon
15.chicken masala                   1/2 teaspoon
16.salt

Clean and marinate prawns with salt, lemon juice,turmeric and shallow fry in a wok till all the water evaporates.By that time make a smooth paste of ginger,garlic,and onion.In a heavy bottom pan add some 2tablespoon of oil.When the oil is hot add ginger garlic and onion paste,turmeric,chilly powder,salt to taste,fine chopped tomato and all the powder spices and saute it in medium flame till oil separates from the masala. In the meanwhile boil potato.Peel,cut and set aside.After you are done with the masala add prawns and potato and 2 cups of water.Cook for 5 -7 min in medium flame.Garnish with coriander leaves.

Serve hot.
